Yellow Claw
A beautiful coffee from a farmer certified organic producer partner, Tat Tvam Asi Organic Farms. Nestled in the heart of Bhadra Forest Range where it gets as wild as possible. It’s not only organic but also proof of coexistence with wild Animals Visiting the Estate in the Calm of the Night. The estate follows Organic Farming based on Sustainable Principles of Permaculture with its strong aim to Conserve & Promote Biodiversity through Organic/Agro-Forestry, they are an Off Grid farm producing their own Electricity with their own Hydro Power Plant, with Annual Reforestation till date they have planted more than 16000 trees and counting.
For this lot Coffee cherries was selectively hand picked, with brix level of 20, the cherries were hand sorted and cleaned. After this these cherries were pulped, leaving a thick layer of mucilage on the beans, it was then dried on raised beds for 17 days.
This coffee has a sweet dry fragrance with mild lime notes, Cocoa and Brown Sugar. In the Aroma there are suggestions
of orange zest, Melon and Brown Sugar.
In the cup, there is presence of Lemon zest notes that was suggested in the aroma, there is also hint of cocoa in the
nose. This cocoa note remains in the background with the coffee having slight bitterness. The Sweetness and brightness mildly intensify as the cup cools, giving
it a more hefty overall impression. The mouthfeel is dry. Flavours of Brown sugar, Grapefruit and Melon lingers in
the after taste.
