Origin:
The coffee cherries used in this lot were carefully sourced from the renowned Pearl Mountain Estate in Athigiri. This high-altitude region provides the perfect conditions for cultivating exceptional coffee beans, known for their complexity and vibrancy.
Thermal Shock Process:
To create this extraordinary coffee, we employed the innovative Thermal Shock process. This method involves exposing the freshly harvested coffee cherries to rapid and extreme temperature changes. The cherries experience alternating cycles of controlled heat and cold, which imparts a distinctive character to the beans.
Anaerobic Fermentation:
Following the Thermal Shock process, the coffee cherries underwent an intensive 36-hour anaerobic fermentation. This phase enhances the development of unique flavors and intensifies the complexity of the coffee. The carefully controlled anaerobic environment allows for the creation of rich and nuanced tasting notes.
Drying Process:
After fermentation, the coffee cherries were meticulously dried on raised beds for 25 days in a poly house. This carefully regulated environment protects the cherries from external factors while ensuring optimal air circulation. The extended drying period allows the flavors to fully develop, resulting in a cup that is exceptionally balanced and flavorful.
