Selective Hand-Picking: Our cherries were hand-picked at the perfect ripeness, achieving an impressive Brix level of 25

Anaerobic Fermentation: The cherries were fermented for 60 hours using a specially cultivated lactobacillus culture, enhancing their natural sweetness and complexity.
Drying Process: Following fermentation, the beans were dried for 24 days on raised beds under shade, preserving their vibrant flavors.
