We are thrilled to introduce our exclusive Koji Fermented Micro-Lot Coffee sourced from the renowned Ratnagiri Estate! This unique coffee showcases the innovative fermentation process that enhances its distinct flavor profile.
The Journey of Our Coffee
Selective Hand-Picking: Our coffee cherries were carefully hand-picked at the ideal ripeness, achieving a remarkable Brix level of 24.
Koji Fermentation: The cherries underwent 52 hours of aerobic fermentation using koji spores sourced from Japan, unlocking complex flavors. Drying Process: After fermentation, the beans were dried on raised beds for 26 days, ensuring optimal flavor development.
