Our Excelsa coffee thrives in the shade of cashew, orange, and custard apple trees, creating a rich microclimate that nurtures the coffee plants and enhances the flavor profile.
Harvesting and Processing
This lot of Excelsa coffee is the result of meticulous attention to detail:
Selective Harvesting: Ripe cherries were hand-picked by skilled laborers at the peak of ripeness, ensuring only the best cherries were selected for processing.
Washing: After harvesting, the cherries were thoroughly washed to remove any debris and impurities, preparing them for the fermentation process.
Fermentation: The washed cherries were then transferred into fermentation tanks where they underwent a 90-hour sequential fermentation. This process utilized specially developed yeast for coffee fermentation, followed by the introduction of a Lactobacillus plantarum culture sourced from Denmark, enhancing the complexity and depth of the final flavor.
